Summertime is the best for fresh vegetables, whether you grow your own, purchase from a grocery store or a farmer's market. Many choices are available for cooking fresh vegetables, but one of the best is roasting. Roasting vegetables is quick, easy and gives the vegetables their own unique flavor, and brings out the natural sweetness of vegetables.
There are two ways that I like to use; roasting on the grill (in a grill basket) and in the oven, using a flat baking pan(jelly roll pan works perfectly). Preparation is the same for both methods. Wash and cut vegetables in small chuncks or pieces. Place in a large mixing bowl and drizle with olive oil. Add salt and pepper to taste, and any desirable dried herbs. Mix well and place in prepared pan (coated with cooking spray). If cooking on the grill, have grill ready, turn burners down to low, place pan on grates and roast till vegetables are slightly soft, stirring frequently. Usually take 20-30 minutes, depending on amout of vegetables in basket.
If roasting in oven, have oven ready, 400 degrees. Place pan in oven and roast till vegetables are slightly soft, stirring frequently. Usually takes 20 -30 minutes.
For a unique flavor, add a splash or two of balsamic vinegar. Yummy
Be careful not to overcook, as vegetables will dry out.
