Quick Meal Ideas

When you work all day, it’s hard to find the time to make nutritious meals for your family. To take the worry and stress off your long day, there are some quick and easy meal ideas you can prepare. Most are ready in less than a hour.

A quick meal idea is spaghetti and meatballs. You can prepare this meal in about 20 minutes. Use frozen meatballs already prepared. Bake until brown. Mix a package of frozen peppers and onions, the kind you use in a stir fry, with a can of spaghetti sauce and heat. Cook and drain pasta. Sprinkle parmesan or romano cheese over the top.

Another quick meal idea is Au Gratin Potatoes with ham. This recipe can be found at worldfamousrecipes.com. It will take about an hour. You will need about 3/4 cup of cubed ham, 3 cups of peeled and sliced potatoes and one chopped onion. You will also need 1/2 cup of shredded cheese ½ cup, 1/2 of a can of cream of mushroom soup, 1/4 cup of milk, and a dash of thyme. Layer 1/2 the potatoes, ham, onion, and cheese. Repeat layers. Combine and mix soup, milk, and thyme. Pour over top. Cover and bake on high for about a hour.

Beef Pasta Casserole is another quick meal idea, and this recipe can be found at minutechef.com. You’ll need to combine 1 pound of cooked beef, 1 medium chopped onion, and 1 teaspoon of minced garlic. Boil 1 1/2 cup frozen cut beans and 1 cup of macaroni until tender. Drain and add a 14 1/2 ounce can of stewed tomatoes, 1 teaspoon of beef bouillon and a 1/2 teaspoon of cinnamon. Mix macaroni with meat mixture and simmer. Sprinkle shredded cheese over top.
