It's easy to get tired of the same old recipes day after day. It's time to explore with meals that are a little out of the ordinary. American food is great, but the tendency is there to take advantage of the "fast food" craze, which can contribute to obesity and health problems due to high fat, cholesterol, sodium etc. It's time to get out of the comfort zone and experiment with other foods and recipes. This recipe is quick, easy, and tastes great.
Pizza Burrito Mexitalian:
1 (15 3/8 ounce) package of Chef Boyardee complete cheese pizza mix, 1 (4 ounce) can of chopped green chilies (drained well), 1 (16 ounce) can of refried beans, 2 tablespoons of chili seasoning, 1/8 teaspoon of hot pepper sauce, and 8 ounces of grated cheddar cheese.
Topping:
1/2 pound of ground beef, 1 chopped onion, 3/4 cup of sliced ripe olives, 1 green pepper (cut in strips), and 1 medium tomato (chopped).
Preheat oven to 425 degrees. Prepare the dough according to the package directions. Mix in 2 tablespoons of the green chilies. Combine the refried beans, chili seasoning, hot pepper sauce and remaining green chilies.
For Topping: Brown the ground beef and drain well. Add the onion, green pepper, tomatoes and ripe olives. Heat this gently for 3 minutes. Grease on 14 inch pizza pan (or one 12 X 14 inch cookie sheet). Spread dough to form 10 X 14 inch rectangle on cookie sheet or spread to edge of pizza pan. Pinch up the sides of the dough to hold sauce. Spread beans over the dough. Top with pizza sauce from the package. Sprinkle with cheese from the package and grated cheddar cheese. Add the beef topping mix. Bake 16 to 20 minutes at 425 degrees.
