The joys of cooking don't require a lot of time in the kitchen. Cooking is something so many love to do, but find it hard to have enough time to enjoy it. Skimping on time doesn't mean skimping on the meal. Here is a delicious meal that the whole family will enjoy.
Teriyaki Steak
Four 5 1/2 oz/150 g beef steaks, salt, pepper, 2 tablespoons vegetable oil, 1 1/4 cups heaping bean sprouts (trimmed), and 4 scallions (trimmed and finely sliced).
Teriyaki Sauce
2 tablespoons mirin (Japanese rice wine), 2 tablespoons sake or pale dry sherry, 4 tablespoons dark soy sauce, and 1 tablespoon granulated or superfine sugar.
Season the steaks with salt and pepper and set aside.
To make the sauce, combine the mirin, sake, soy sauce, and sugar in a bowl, stirring well.
Heat 1 tablespoon of oil in a skillet over high heat. Add the bean sprouts and saute quickly, tossing them in the hot oil for 30 seconds. Remove from the skillet and drain on paper towels.
Add the remaining oil to the skillet and when hot add the steaks. Cook for 1 to 3 minutes on each side, according to how rare you like your meat. Remove from the skillet and keep warm.
Remove the skillet from the heat and add the sauce and scallions. Return to the heat and simmer for 2 minutes, stirring until the sauce thickens slightly and is glossy.
Slice each steak and arrange on a bed of bean sprouts. Spoon over the sauce and serve immediately.
