Deep Dish Taco Squares

This is a delicious and original take on southwest food, great for feeding the family - you might even have leftovers. Here's what you're going to need to get started.

2 cups baking mix (Bisquick works great)
1 pound lean ground beef
2 tablespoons onion, finely chopped
8 ounces reduced fat sour cream
1/3 cup reduced fat mayonnaise
1/2 cup cold water
1 chopped green pepper
8 ounce can tomato sauce
1 cup shredded Cheddar or "Mexican blend" cheese


Getting hungry yet? Well let's get this show on the road. Follow these simple steps and you'll be well on your way to a full stomach.

1. Preheat the oven to 375 degrees.

2. In a bowl, combine the Bisquick (or whatever mix you decide to use) and water, stirring until well-blended. Press it into a greased 12 x 8 x 2 inch glass baking dish, then throw it in the oven for 8-10 minutes. Don't leave it in there too long, or this party will be over before it gets started.

3. In a nonstick skillet, cook the beef, green pepper, and onion until the meat is brown and no pink remains. For some extra spice, try adding some taco seasoning. When finished, drain the grease - save it for a special occasion.

4. Stir in the tomato sauce, and then spoon the entire mixture evenly over the crust.

5. Grab another bowl, and combine the sour cream with the cheese and mayonnaise. Mix until it blends well, then spoon this evenly over the top of the meat mixture.

6. Sprinkle the top with paprika, more cheese, or another seasoning of your choice. Don't be afraid to experiment.

7. Throw everything back into the oven and bake, uncovered, for another 25-30 minutes, depending on how crispy you want your crust to be. Different strokes for different folks.

8. Remove from oven. Careful - it's hot. Let it stand about five minutes before serving.

9. Serve. Eat. Rejoice.
