Easy Recipes

Here are a couple of great recipes that are very fun and easy to make.

SAUSAGE CHEESE PUFFS

1 Pound bulk Italian sausage
3 Cups biscuit/baking mix (Bisquick)
4 Cups (16 oz.) shredded cheddar cheese
3/4 Cup water

In a skillet, cook and crumble the sausage until it is no longer pink, and then drain. In a bowl, you will combine the biscuit mix and cheese, then stir in the sausage. Add the water and toss with a fork until all is moistened. Now shape the mixture into 1-1/2 inch balls. Place the balls 2 inches apart on an ungreased baking sheet. Bake at 400 degrees for 12-15 minutes or until puffed and golden brown. Cool the baking sheets on wire racks. YIELD: About 4 dozen. NOTE: Baked puffs may be frozen. Reheat the puffs at 400 degrees for 7-9 minutes or until heated through. They do not need to be thawed first.


IMPOSSIBLE PIE!

4 Eggs
1/2 Cup sugar
1/2 Cup Bisquick
2 Tsp. vanilla
1/4 Cup margarine, softened
3/4 Cup shredded coconut
2 Cups milk

Place all ingredients together in a blender. Run on HIGH for one minute. Grease a 9 inch pie plate. Pour the mixture into the greased pie plate and let set for one minute. Bake at 350 degrees for 45-50 minutes. This comes out like a coconut custard pie! Feel free to serve plain, or you may wish to use a dab of whipped cream!

Both of these recipes are great for every day use. The puffs are great to use as appetizers as well.
