Nourishing Food for the Smaller Appetite

It has become increasingly difficult to find recipes and foods that will work for one or two people or for people that are older and have less appetite.

When shopping, the best source to find the smaller vegetables is in the organic section. You can find pre-cut fruits and vegetables, such as onions, potatoes, and carrots.

The following recipe is one that can be fixed in a very short time and in smaller portions.

Cheesy Mini Meatloaves
2 lb. lean ground beef
1 small onion - finely chopped
2/3 c bread crumbs
1 egg
salt/pepper
1/2 c grated cheese

Mix the above ingredients together in a medium bowl, except the grated cheese. Pack the mixture into 12 muffin cups. Sprinkle the grated cheese on top of each mound of meat mixture. Bake at 350 for 45 minutes or until meatloaves are set and brown and meat is no longer pink inside. To add tangy flavor to the meatloaf, try pouring a mild tomato sauce over the mini meatloaves.

To complete the meal, serve with potatoes, vegetables and fruit. You now have a delightful and healthy meal. This meal can be increased to feed many additional guests.

To store the mini-meatloaves, wrap individually in clear wrap or small baggies. Keep refrigerated. They can be heated in microwave or oven.
