If you are wanting something different to serve, here are a couple of favorites.
SPINACH CHEESE SWIRLS
1 package (10 oz.) frozen chopped spinach, thawed & drained
2 Cups (8 oz.) shredded mozzarella cheese
1 Cup finely chopped onion
1 garlic clove, minced
1 tube (10 oz.) refrigerated pizza crust
In a bowl, combine the first four ingredients and mix well. On a greased baking sheet, roll pizza dough into a 14 in. X 10 in. rectangle, sealing any holes. Spoon the filling over the crust to within 1 inch of the edge. Roll up the crust, jelly-roll style, starting with a long side. Seal the ends and place the seam side down on the baking sheet.
Bake at 400 degrees for 25-27 minutes, or until golden brown. Cut into slices to serve. YIELD: Four servings. (You can also cut into smaller slices and use as appetizers).
HAM ROLL UPS
1 Package (8 oz.) cream cheese, softened
1 Can (2-1/4 oz.) chopped ripe olives, drained
1/3 Cup thinly sliced green onions
8 to 10 thin slices fully cooked deli ham
In a mixing bowl, beat the cream cheese until smooth. Stir in the olives and green onions. Spread the mixture over the ham slices. Roll the slices of ham like a jelly roll, starting with a short side. Chill the rolls for at least one hour. Just before serving, cut the rolls into 1 inch pieces. YIELD: Approximately 40
Both of these recipes are great appetizers, as well as just a bit of something different to serve for lunch.
